A Northwest Culinary Academy Graduate, has loved cooking since she was a little girl, her mom was a great cook, as her mom before her.
She remembers her first big job in the kitchen when she was about 8, which was making sure the Tajadas (sliced fried plantain) did not burn. It was a big deal flipping the tajadas.
She was hooked!
From then on, she was always sitting on the kitchen counter watching her mom make delicious Spanish food (she was from Tenerife).
After her mom’s passing when Maria was just 11, she continued helping in the kitchen and learning Spanish food but this time on her grandmother’s kitchen counter.
She moved to Canada when she was 19, worked in kitchens as a waitress and sous chef, also in travel, logistics, marketing and liquor business. She became an expert in wine and spirits as well as getting certifications from Wine and Spirit Education Trust (WSET), but her passion has always been food, learning about it, preparing it and of course, eating it.
Taso and Maria always dreamed of opening a restaurant but when the world shut down, it didn’t seem like the right time, so they decided to start with a food truck offering homemade Spanish and South American dishes passed down from both her Venezuelan and Spanish grandmothers (one day we will do Greek) using the best quality meats, and the freshest, locally sourced ingredients (except for the tropical ones, of course) to offer the public a taste of the food we love and serve at home.
Spanish cuisine is rich in history, flavors, GARLIC…yummm, olive oil, fresh herbs, saffron, various meats, seafood….I could go on, and you will find it in one way or another in every Latin American household, each country tweaking a Spanish dish and making it their own, using their family recipes, culture, native spices and vegetables.
Our truck will give you a taste of old world meets new world, with a bit of this and a bit of that and a whole lot of love.
